Stuffed Peppers
A basic stuffed pepper recipe that everyone needs to have in their arsenal.
This is probably one of my most favorite recipes in my arsenal. I always make the full recipe and then freeze half of the meat mixture and buy half the amount of bell peppers, so I have a cheap meal for some day in the future.
What You Need:
10 medium bell peppers
2 lb. ground beef
1 medium onion, grated
1/2 cup uncooked rice
1 can (4 oz.) tomato paste
3 tomatoes, chopped
1/2 cup water
Salt and pepper to taste
Directions:
Cut tops off peppers and remove seeds.
Heat a pot of salted water to a boil and add peppers; cook for 5 minutes and drain.
Brown ground beef with onion in a deep skillet over medium-high heat.
Add the rest of the ingredients and simmer for 15 minutes or until most of the liquid is absorbed.
Spoon meat mixture into peppers that are sitting on a foil-lined baking sheet.
Bake in a preheated 350 degree oven for 45 minutes to 1 hour.
