Stuffed Peppers

A basic stuffed pepper recipe that everyone needs to have in their arsenal.

This is probably one of my most favorite recipes in my arsenal. I always make the full recipe and then freeze half of the meat mixture and buy half the amount of bell peppers, so I have a cheap meal for some day in the future.

What You Need:

  • 10 medium bell peppers

  • 2 lb. ground beef

  • 1 medium onion, grated

  • 1/2 cup uncooked rice

  • 1 can (4 oz.) tomato paste

  • 3 tomatoes, chopped

  • 1/2 cup water

  • Salt and pepper to taste

Directions:

  1. Cut tops off peppers and remove seeds.

  2. Heat a pot of salted water to a boil and add peppers; cook for 5 minutes and drain.

  3. Brown ground beef with onion in a deep skillet over medium-high heat. 

  4. Add the rest of the ingredients and simmer for 15 minutes or until most of the liquid is absorbed.

  5. Spoon meat mixture into peppers that are sitting on a foil-lined baking sheet.

  6. Bake in a preheated 350 degree oven for 45 minutes to 1 hour.
