Walking Tacos

A perfect grab and go dinner with very little prep marrying the idea of a Frito pie and tacos together!

I don’t know how I missed out on walking tacos my whole life, but I somehow did. The first time I saw these on Picky Palate, my mind was blown. We occasionally eat taco salad and occasionally enjoy a Frito pie. This is the perfect combination of the two. Fritos with tacos works just as well as it does for chili. They are great for busy evenings when you have any type of activity that requires a grab and go style dinner.

What You Need:

  • Small bags Fritos (one for each person - or more for each person, depending on how many they eat)

  • 1 lb. ground beef

  • 1 packet taco seasoning

  • 1/4 cup water

  • 1 each red and green bell pepper, sliced

  • 1 small onion, diced

  • 1 clove minced garlic

  • 1 can (15 oz) diced tomatoes

  • Toppings: shredded Monterey Jack cheese, sour cream, etc.

Directions:

  1. In a skillet, saute peppers, onions, and garlic in a little vegetable oil over medium-high heat until softened. Remove and set aside.

  2. Brown ground beef in the same skillet as vegetables over medium-high heat; drain if needed.

  3. Then add taco seasoning and water. Stir in vegetables and simmer on low to medium-low until liquid is soaked up.

  4. Serve with a scoop of meat per bag of Fritos.

  5. Then your toppings and ENJOY ON THE GO :)
