Raspberry Cream Cheese Coffee Cake
A perfectly tart coffee cake with raspberries, a cream cheese filling, and a streusel topping!
Coffee cake is one of the best breakfast foods imo because it’s a socially acceptable way to have cake for breakfast. This cake was dense and not overly sweet, but a little tart. It’s a great way to use fresh raspberries as well! There is a lovely cream cheese filling and an even lovelier streusel topping!
What You Need:
For the Filling:
1/4 cup granulated sugar
8 oz. cream cheese, softened
1 egg white
1 cup raspberries
For the Cake:
1 1/2 cups all purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
5 1/2 Tbsp. unsalted butter, softened
1/2 cup granulated sugar
1 large egg + 1 large egg yolk
3/4 cup sour cream
1 tsp. vanilla extract
For the Streusel Topping:
1/3 cup granulated sugar
1/2 cup all purpose flour
3 Tbsp. unsalted butter, cubed and chilled
Directions:
For the Filling: Beat together sugar and cream cheese on medium low speed until creamy.
Add egg white and mix on low just until combined. Then set aside.
For the Cake: In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.
In the bowl of a stand mixer, beat together butter and sugar on medium low speed.
Add egg, egg yolk, and vanilla. Mix until just combined.
Alternate adding flour mixture and sour cream and mix until just combined.
Prep a 9-inch springform pan by lining the bottom with parchment paper and spraying lightly with nonstick cooking spray.
Pour prepared cake batter into a springform pan and smooth the top with a spatula.
Spread filling on top of batter gently. Then top with raspberries.
For the Streusel Topping: Combine sugar, flour, and chilled butter in a bowl. Use a fork or pastry cutter to form crumbly, pea-sized pieces.
Sprinkle on top of the raspberries.
Bake in a preheated 350 degree oven for 40 to 45 minutes or until a toothpick inserted in the center comes out clean.
Let cool on a rack. Before removing the ring, run a knife around the edges of the cake.
