Loaded Beef Skillet Nachos

Nachos loaded with seasoned beef, corn and bean salsa, and loads of cheese.

If you’ll notice, these nachos are not in a skillet in this picture and it’s because your girl used the biggest skillet I had instead of a medium one, so I had to use my sheet pan for the oven part. Not a huge deal but if you plan ahead and can do it in a skillet - do it!

What You Need:

  • 1 Tbsp. olive oil

  • 1 lb. lean ground beef

  • 1 packet taco seasoning mix

  • 8 cups tortilla chips

  • 1 jar (13 oz) bean and corn salsa

  • 2 to 3 cups shredded Mexican cheese

  • 2 green onions, diced

  • 1 to 2 Tbsp. chopped cilantro

Directions:

  1. In a large skillet, add oil and ground beef over medium-high heat. Cook and crumble until beef has browned.

  2. Sprinkle the taco seasoning over the top, stir, and set aside.

  3. In a separate large oven safe skillet, add half the chips.

  4. Top with half the beef, half the salsa, and half the cheese. Repeat the layers starting with the chips.

  5. Bake in a preheated 350 degree oven for 10 minutes or until cheese has melted.

  6. Sprinkle green onions and cilantro on top. Serve immediately.
