Instant Pot Chicken & Dumplings
Classic comfort food made easy with the help of an Instant Pot.
Happy Monday! Football season is officially over which has nothing to do with today’s recipe but it’s a big ole bummer. Today’s recipe is one I made for my family because they love chicken and dumplings (and I don’t). I will say that this was fine and the family loved it. So it’s a win all around because it was pretty easy and quick to make.
What You Need:
For the Chicken:
2 medium boneless, skinless chicken breasts
6 cups chicken broth
2 ribs celery, cut in half
1/2 onion, cut in quarters
Salt and pepper to taste
For the Dumplings:
3 cups all purpose flour
1 Tbsp. baking powder
1 1/4 tsp. salt
1 cup + 2 Tbsp. milk
Directions:
For the Chicken: Cut each chicken breast in half and place into the insert of the Instant Pot.
Add broth, celery, and onion. Add lid and adjust valve to seal.
Cook on HIGH for 3 minutes.
For the Dumplings: Meanwhile, mix together flour, baking powder, salt, and milk until combined. Dough will be a little shaggy.
Roll out on a floured surface until about 1/4-inch thick.
Use a pizza cutter to cut into 1 to 2 inch strips or squares.
Release pressure from Instant Pot and then remove lid carefully.
Discard celery and onion and remove chicken to a plate.
Add dumpling strips into hot broth and stir.
Turn Instant Pot on saute to simmer for about 15 to 20 minutes.
Meanwhile, shred the chicken. Once dumplings are cooked and broth has thickened, add chicken back to the insert and stir to combine.
Season with salt and pepper to taste.
