Grilled Chicken with Avocado Salsa

Lovely cilantro lime grilled chicken topped with a bold avocado salsa!

This recipe is one I’ve made countless times at this point and cannot get over how good it is. I love an avocado salsa and I’m so mad I waited so long to try avocado because I could have been enjoying dishes like this for years. The chicken is marinated in a garlic cilantro lime marinade and you can grill, bake, or cook it in a skillet. So it’s very versatile.

What You Need:

For the Chicken:

  • 1 1/2 lb. boneless, skinless chicken breasts

  • 2 cloves minced garlic

  • 3 Tbsp. olive oil

  • 1/4 cup cilantro, chopped

  • Juice of 1 lime

  • 1/2 tsp. cumin

  • 1/2 tsp. paprika

  • 1/2 tsp. salt

  • 1/4 tsp. black pepper

For the Avocado Salsa:

  • 2 avocados, diced

  • 2 roma tomatoes, diced

  • 1/4 cup red onion, diced

  • 1 jalapeno, seeded and diced

  • 1/4 cup cilantro, chopped

  • Juice of 1 lime

  • Salt and pepper to taste

Directions:

  1. For the Chicken: Slice chicken breasts in half and pound to an even thickness.

  2. In a large bowl, whisk together garlic, olive oil, cilantro, lime, cumin, paprika, salt, and black pepper.

  3. Add chicken to marinade and chill in the fridge for 30 minutes or up to 12 hours.

  4. Grill chicken over medium high heat OR in a large skillet on the stove for 5 to 6 minutes per side or until cooked through and outside is charred.

  5. For the Avocado Salsa: Meanwhile, combine all of the salsa ingredients in a bowl and cover with plastic wrap. Chill until ready to use.

  6. Serve the chicken topped with avocado salsa.
