Instant Pot Butter Chicken
Savory butter chicken prepped in the Instant Pot for an easy meal!
I’m not sure when exactly we tried butter chicken for the first time but it was a hit immediately and all of us really liked it. We proceeded to have it multiple times a month for a good couple months in a row. I really love this recipe because it’s mostly prepared in the instant pot which means it’s really easy and hands off for me to get dinner together.
What You Need:
1 can (14 oz) diced tomatoes
5 to 6 cloves minced garlic
1 to 2 tsp. minced ginger
1 tsp. tumeric
1/2 tsp. cayenne pepper
1 tsp. smoked paprika
1 tsp. salt
1 tsp. garam masala
1 tsp. ground cumin
1 lb. boneless skinless chicken breasts
8 Tbsp. unsalted butter, cut into cubes
1/2 cup heavy cream
1 tsp. garam masala
1/4 to 1/2 cup chopped cilantro
Directions:
Place all ingredients up to butter (not including) into the Instant Pot. Mix well and add chicken, pushing under the sauce.
Cook on HIGH pressure for 10 minutes. Then release pressure.
Open and remove chicken, set aside.
Blend sauce in Instant Pot with an immersion blender (or remove to a blender to blend carefully because liquid will be hot!). Let cool for 5 to 10 minutes.
Add butter, heavy cream, garam masala, and cilantro. Stir until combined.
Break chicken up into bite-size pieces or shred it. Add back to sauce.
Serve over rice or zucchini noodles.
