Chorizo Burgers
A mix of beef and chorizo makes for an excellent burger topped with cilantro mayo, egg, and bacon.
One of my favorite burgers we make frequently is a barnyard or a 3AM burger - both of them have bacon and eggs on them. This particular burger was truly for my husband because he loves chorizo - where I am still kinda skeptical about it. Mostly because I never feel like I can tell if it’s fully cooked or not. Burgers was a great way to cook chorizo because once that beef is done, the chorizo is also done. Loved loved loved the cilantro mayo and you cannot skip out on the taco tots.
What You Need:
For the Taco Tots:
1 bag (32 oz) frozen tatortots
1 Tbsp. taco seasoning
1 cup shredded Monterey Jack cheese
For the Burgers:
8 slices thick cut bacon
1/4 cup mayonnaise
1/4 cup fresh cilantro, chopped
Salt and pepper
1 lb. ground beef
1/2 lb. chorizo
1 can (4 oz) diced green chillies
2 1/2 Tbsp. olive oil
2 Tbsp. salted butter
4 large eggs
4 burger buns
Green leaf lettuce leaves
1 large tomato, sliced thin
Hot sauce to taste
Directions:
For the Taco Tots: Toss tatortots with taco seasoning and add to a sheet pan.
Bake in a preheated 425 degree oven for 20 minutes.
Remove from oven and top with cheese. Bake for an additional 5 minutes.
Meanwhile, line a second sheet pan with foil and add bacon.
Bake in a preheated 425 degree oven for 18 to 20 minutes or until crispy.
Make the cilantro mayo by mixing together mayonnaise, cilantro, and salt and pepper to taste. Chill until ready to use.
Make patties by mixing together ground beef, chorizo, green chillies, salt, and pepper. Separate into four balls and flatten into a disc.
In a cast iron skillet, add 2 Tbsp. olive oil over medium heat. Add patties and smash with spatula.
Cook for 4 to 5 minutes on each side and remove to a plate.
Meanwhile, fry eggs in remaining 1/2 Tbsp. olive oil in your desired cooking method - sunny side up or break the yolks and cook completely.
For serving: spread a little cilantro mayo on the bottom and top of each bun.
Top with a cooked patty, 2 pieces of bacon, lettuce, tomato, and egg. Drizzle with hot sauce. Top with top bun.
