Chicken Gyros
A classic recipe everyone should have in their arsenal!
I am in love with gyros and this is such a classic recipe. There’s no frills to it - just a very basic, but delicious recipe. The flavor is all in the chicken marinade with a little bit of lemon and red wine vinegar with garlic and some other spices. And then it’s the classic cucumber, onion, and tomato topping with tzatziki (although I forgot to put mine on for the picture). Also my local store has terrible pitas, so we just use flatbreads.
What You Need:
1 lb. chicken breasts, thinly sliced into strips
1/2 cup plain Greek yogurt
1/4 cup olive oil
Juice of 1/2 lemon
2 Tbsp. red wine vinegar
1 Tbsp. minced garlic cloves
1 tsp. dried oregano
1 tsp. paprika
1 tsp. salt
1 tsp. ground black pepper
1 Tbsp. olive oil
4 to 6 pita bread or flatbreads
2 cups chopped romaine lettuce
1 1/2 cups cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, diced
Tzatziki sauce for serving
Directions:
Mix together yogurt, olive oil, lemon juice, red wine vinegar, garlic, oregano, paprika, salt, and pepper in a small bowl. Pour over chicken in a large zipper baggie. Marinate for 30 minutes or up to 8 hours.
Strain chicken from marinade and add to a large skillet that has been heated over medium heat.
Cook on each side for 6 minutes or until golden brown and cooked through. Remove from the pan and let rest for 5 minutes.
Toast pitas until heated through. Layer with lettuce, tomatoes, cucumber, and onion.
Slice chicken into strips and add to pitas. Drizzle with tzatziki sauce.
