One Pot Sausage Pasta
A one pot wonder with three cheeses and a tomato-based sauce with sausage!
The pictures of this recipe crack me up because no matter how hard I tried to contain it, the melty cheese was everywhere. I’m honestly surprised this isn’t called One Pot Cheesy Sausage Pasta. It’s a rich tomato-based pasta dish with mozzarella, cream cheese, and parmesan cheeses.
What You Need:
1 Tbsp. olive oil
1 lb. sweet Italian sausage
1 medium onion, diced
2 tsp. dried oregano
1/2 tsp. fennel seeds
Pinch red pepper flakes
2 cloves minced garlic
Salt and pepper
4 cups chicken broth
1 can (28 oz) tomato puree
2 Tbsp. tomato paste
1 lb. fusilli pasta
1 cup shredded mozzarella cheese
1/4 cup cream cheese or mascapone
Shaved parmesan for serving
10 to 12 fresh basil leaves for serving
Directions:
Heat olive oil in a large deep skillet over medium heat. Once hot, add sausage and cook while crumbling for about 5 minutes.
Add onions and cook until softened and no pink remains in sausage, about 5 more minutes.
Add oregano, fennel, red pepper flakes, garlic, salt, and pepper. Stir again.
Add broth, tomato puree, and tomato paste and stir well to combine.
Add uncooked pasta and press gently under liquids. Bring to a simmer and cook for about 15 to 20 minutes, stirring occasionally until pasta is cooked al dente.
Remove from heat and add in mozzarella and cream cheese.
Taste for seasoning and serve with shaved Parmesan and basil.
