Chicken Enchilada Soup

An easy soup to throw together and let simmer - making your whole house smell yummy!

OMG! Totally incredibly DELICIOUS - y'all HAVE to try this :] Big thanks to Kristi (she does Foodie Fridays on her blog and cute crafts too!)

What you need:

  • 3 chicken breasts

  • 5 cups chicken stock

  • Cumin

  • Chili powder

  • Dried, diced onions

  • Cayenne pepper

  • 1 cup uncooked rice

  • 2 pints salsa

  • 1 can (15 oz.) each black beans and navy beans

  • 1 can (10 oz.) enchilada sauce

Directions:

  1. Bring first set of ingredients (up to rice) to a boil in a large saucepan.

  2. Continue boiling until chicken is cooked. Use spatula to chop chicken into bite-sized pieces.

  3. Add remaining ingredients and bring to a boil.

  4. Reduce to a simmer for 40 to 60 minutes.

  5. Eat with tortilla chips or oyster crackers and cheese.
