One Pot Taco Pasta

A taco-flavored pasta dish that is ready in under 30 minutes in one pot!

Howdy howdy. Another Monday has arrived and I’m sharing another one pot recipe because OF COURSE! I love one pot meals and I also really like when they are ready in under 30 minutes. Being a working mom is rough on the time-honored tradition of dinner on the table at 6 and we’ve had to let that go a little bit. We’re 7 o’clock dinner eaters now which is totally fine. I like one pot or quick meals for the days I’m in the office and this one is easy and delicious.

What You Need:

  • 1 Tbsp. olive oil

  • 1 yellow onion, diced

  • 2 cloves minced garlic

  • 1 lb. ground beef

  • 1 packet taco seasoning mix

  • 1 can (15 oz) diced tomatoes

  • 1 can (4 oz) diced green chillies

  • 1 lb. small pasta shells or penne

  • 4 cups beef broth

  • 2 cups shredded cheddar cheese

  • 2 green onions, sliced

Directions:

  1. In a deep skillet over medium heat, add olive oil, onion, and garlic.

  2. Add ground beef and cook while crumbling. Add taco seasoning and stir well.

  3. Add diced tomatoes and green chillies. Stir to combine.

  4. Add uncooked pasta and beef broth. Stir and try to press most of the pasta under the broth.

  5. Cover with a lid and turn heat up to medium-high heat, bringing broth to a full boil.

  6. Uncover and stir. Cover and turn heat down to medium low heat.

  7. Simmer for about 10 minutes or until pasta is tender, stirring every few minutes.

  8. Add cheese and stir until melted.

  9. Serve topped with green onions.
