One Pot Italian Sausage and Tomato Basil Pasta
A dream of a recipe that is ready in under 30 minutes in one pot!
I’m back with another one pot meal that is ready in under 30 minutes - my absolute favorite type of recipe for this time of year. I only have one child left in grade school (the other two are in college - when did that happen?!) but these style of recipes are a lifesaver with after school meetings and extra-curriculars. This is an easy recipe and isn’t overly complicated. I really love the use of canned diced tomatoes (no cutting grape tomatoes) and the fresh basil!
What You Need:
1 lb. Italian sausage
2 to 4 Tbsp. olive oil
3 to 5 cloves minced garlic
1 tsp. oregano
1 can (14.5 oz) petite diced tomatoes
2 1/2 cups water
2 cups penne pasta
1/4 cup sour cream
2/3 or 3/4 cup grated Parmesan cheese
1/2 cup loosely packed fresh basil, chiffonaded
Ground black pepper
Directions:
In a deep skillet, cook and crumble sausage over medium high heat. You can use a tablespoon of oil if desired. Do not drain.
Add garlic and oregano. Cook for about 1 minute until fragrant, stirring.
Add tomatoes, water, and penne. Stir together and push pasta into the liquid as much as you can.
Cover and reduce heat to medium low. Simmer for 15 minutes or until pasta is cooked al dente and liquid is nearly gone. Stir once halfway through to make sure pasta doesn’t stick to the bottom.
Turn off heat and add sour cream, stirring to combine.
Add Parmesan and stir.
Then finally stir in basil and pepper. Serve!
