One Pan Italian Sausage & Veggies

One pan loaded up with all the veggies and smoked sausage with an Italian seasoning flair!

I love a sheet pan recipe and have shared a few that are pretty quick to throw together. Breaking from that mold a bit with this recipe because it does take a little more prep and bakes for a bit, but the outcome is so worth it. This sheet pan recipe has so many veggies and the smoked sausage pairs well with every single one of them. I am a terrible recipe reader, in that I never read the directions until I’m about to make something, so I didn’t realize this could have been served over rice if I wanted to. But I honestly think with the potatoes, it didn’t really need that anyways!

What You Need:

  • 2 large carrots, peeled and diced

  • 2 cups red potatoes, diced

  • 1 medium zucchini, sliced into half moons

  • 2 red bell peppers, cut into pieces

  • 1 head broccoli, cut into florets

  • 16 oz. smoked Italian sausage (turkey or chicken)

  • 1/2 Tbsp. dried basil

  • 1/2 Tbsp. dried oregano

  • 1/2 Tbsp. dried parsley

  • 1/2 Tbsp. garlic powder

  • 1/2 tsp. onion powder

  • 1/2 tsp. dried thyme

  • 1/8 tsp. red pepper flakes

  • 1/2 tsp. salt

  • 1/8 tsp. ground black pepper

  • 1/3 cup grated Parmesan cheese

  • 4 1/2 Tbsp. olive oil

  • Fresh parsley

  • Cooked rice, quinoa, or cauliflower rice for serving, optional

Directions:

  1. Place all veggies and sausage on a parchement or foil-lined sheet pan.

  2. Drizzle with olive oil and season with basil, oregano, parsley, garlic powder, onion powder, thyme, and red pepper flakes. Season with salt and pepper to taste.

  3. Toss to coat with oil and seasonings, then spread out into an even layer.

  4. Bake in a preheated 400 degree oven for 15 minutes.

  5. Remove from oven and toss/stir the veggies and sausage around.

  6. Return to oven and bake for an additional 10 to 20 minutes.

  7. Remove from oven and top with Parmesan and parsley, if desired.

  8. Serve as is, or over a bed of rice, quinoa, or cauliflower rice.
