Nutella Chocolate Cupcakes
Nutella on Nutella with even more Nutella - these chocolate cupcakes are the best!
I have coworkers that still talk about these cupcakes from 3 1/2 years ago. I don’t make cupcakes super often anymore because I simply don’t have enough people to feed to warrant making them. However, Friendsgiving at work is totally an excuse and I just had to make these Nutella cupcakes. They are rich Nutella flavored cupcakes with a Nutella filling and Nutella buttercream frosting. You can decorate these with a drizzle of Nutella and hazelnuts or you could do Ferrero Rochers. It’s up to you!
What You Need:
For the Nutella Cupcakes:
1 2/3 cups all purpose flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
3/4 cup unsalted butter, melted
1 cup granulated sugar
1 tsp. vanilla
2 large eggs
1/2 cup sour cream
1/2 cup Nutella
1/4 cup milk
For the Nutella Buttercream Frosting:
1 cup unsalted butter, at room temperature
1/2 cup Nutella
4 cups powdered sugar
2 to 4 Tbsp. heavy cream
For Filling & Decoration:
1 cup Nutella for Filling
Additional Nutella for drizzle, if desired
Ferrero Rocher candies, if desired
Chopped hazelnuts, if desired
Directions:
For the Cupcakes: In a medium bowl, combine flour, baking powder, baking soda, and salt. Set aside.
In a large bowl or stand mixer bowl, whisk together melted butter, sugar, and vanilla until well combined.
Add eggs and then whisk together until well combined.
Add sour cream and Nutella and whisk until well combined.
Add milk and whisk until well combined.
Slowly add the dry ingredients and whisk until just combined. Do not overmix.
Fill cupcake liners slightly more than halfway full.
Bake in a preheated 350 degree oven for 16 to 20 minutes or until a toothpick inserted into the center comes out clean.
Set aside on a wire cooling rack to cool.
For the Buttercream Frosting: Add butter and Nutella to a large mixing bowl. Beat until well combined and smooth.
Add half the powdered sugar and beat until well combined and smooth.
Add 2 Tbsp. of the cream and beat until well combined and smooth.
Add remaining powdered sugar and beat until well combined and smooth.
Finally add remaining cream and beat until well combined and smooth.
For Filling: Core the cupcakes to remove the center and then fill with Nutella.
Pipe the frosting on top of each cupcake and then finish with Ferrero Rocher, a drizzle of Nutella, and/or chopped hazelnuts.
