Melt in Your Mouth Buttermilk Pancakes

This delicious thick pancake recipe is topped with a melt-in-your mouth homemade buttermilk syrup!

I have made so many pancakes over the years but very rarely have I made my own syrup. I’m a picky gal but I’m also pretty willing to try and food once. Buttermilk syrup didn’t necessarily sound like something I’d like but I was like, let’s go, first time for everything! I really loved it. It’s what added that melt in your mouth to this recipe. It was buttery and rich but not too rich and sweet but not too much. Such a wonderful addition to a buttermilk pancake recipe.

What You Need:

For the Pancakes:

  • 1 tsp. salt

  • 2 tsp. baking powder

  • 1 tsp. baking soda

  • 2 cups all-purpose flour

  • 2 Tbsp. granulated sugar

  • 2 large eggs

  • 2 cups buttermilk

  • 2 Tbsp. unsalted butter, melted

For the Buttermilk Syrup:

  • 1/2 cup unsalted butter

  • 1 cup buttermilk

  • 1 cup granulated sugar

  • 2 tsp. vanilla

  • 1 Tbsp. light corn syrup

  • 1/2 tsp. baking soda

Directions:

  1. For the Pancakes: Whisk together dry ingredients in a medium bowl. Create a well in the middle and set aside.

  2. In a separate bowl, whisk together buttermilk and melted butter. Add eggs and whisk one at a time.

  3. Pour wet ingredients into the well of the dry ingredients. Use a rubber spatula to gently mix batter until a few flour streaks remain. Do not overmix.

  4. Scoop batter by 1/4 cup onto a preheated griddle and slightly spread thick batter into a circle.

  5. Cook until first side is golden brown, then flip and cook until golden brown. Repeat with remaining batter.

  6. For the Buttermilk Syrup: In a large saucepan, combine all ingredients except for baking soda.

  7. Bring to a boil while stirring, then remove from heat and stir in baking soda which will make it foam up.

  8. Return to heat for 30 to 60 seconds and stir until foam dies down.

  9. Serve pancakes topped with warm buttermilk syrup.
