Loaded Ground Beef Nachos

Ground beef nachos loaded topped with queso blanco, pico de gallo, and all the fixings!

I’m not sure anything is better than nachos with all the fixings. I typically make copycat Nachos Bell Grande but thought it would be nice to switch it up with these nachos that use queso blanco and have the beans mixed into the beef. Plus pico de gallo and guacamole AND spicy pickled jalapenos on top! Easily a keeper and a crowd pleaser.

What You Need:

For the Ground Beef & Beans:

  • 1 lb. lean ground beef

  • 1 1/2 tsp. chili powder

  • 1 tsp. ground cumin

  • 1 tsp. onion powder

  • 1 tsp. garlic powder

  • 1/2 tsp. smoked paprika

  • 1/2 tsp. dried oregano

  • 1/2 tsp. salt

  • 1/4 tsp. pepper

  • 1/4 tsp. cayenne pepper

  • 1 can (16 oz.) refried beans

  • 1/2 cup salsa

  • 1/4 cup sour cream

  • 1/4 cup water

For the Chips and Cheese:

  • 14 oz. tortilla chips

  • 1 jar queso of your choice, heated

For the Topping:

  • Sour cream

  • Guacamole or diced avocado

  • Pico de gallo

  • Sliced black olives

  • Pickled jalapenos

  • Green onions, diced

Directions:

  1. For the Beef & Beans: In a large skillet over medium heat, brown ground beef and crumble. Drain grease.

  2. Add all seasonings, beans, and salsa. Mix well.

  3. Add sour cream and heat through. Thin with water if needed to get to spreadable consistency.

  4. For serving: If you are going to have leftovers or everyone prefers their own toppings, serve separately. If you want to build them, spread 1/2 of the chips in a single layer, drizzle with 1/3 of the cheese sauce.

  5. Top with 1/2 of the beef. Repeat with remaining 1/2 of the chips, 1/3 cheese sauce, and remaining 1/2 of the beef.

  6. Finally, top with remaining 1/3 cheese sauce. Garnish with desired toppings and serve!
