Jalapeno Chicken Salad

This chicken salad has lots of yummy veggies and is perfect for meal prepping!

Earlier this year, I started to meal prep for my lunches for the week. I was struggling to have enough leftover meals (hi having 2 teenagers and a preteen in the house) to take to work with me. I’m still figuring out what I like - yes, 7 months into this year - but I think that chicken salad is easily one of my top 3 favorite lunches. There are so many variations you can do and you can add so many veggies and even fruits! You can also eat it many different ways. If I’m at home, I love a toasted bagel, but when I pack it for lunch, I like protein chips, pita chips, Ritz crackers, baby bell peppers, etc. I immediately loved this recipe because it had jalapeno, avocado, and red onion. Definitely a keeper!

What You Need:

  • 2/3 cup mayonnaise

  • 1 Tbsp. lime juice

  • 1/4 tsp. ground cumin

  • 3 cups shredded, cooked chicken

  • 1/2 celery rib, finely diced

  • 1/2 red bell pepper, seeded and finely diced

  • 1/2 red onion, finely diced

  • 1/2 avocado, diced

  • 2 Tbsp. chopped cilantro

  • 1/4 cup sliced pickled jalapeno peppers, diced

  • Salt and pepper to taste

Directions:

  1. In a medium bowl, stir together mayonnaise, lime juice, and cumin.

  2. Add remaining ingredients and stir well to combine.

  3. Serve on your favorite kind of bread (I love bagels!) or with crackers, etc.
