Instant Pot Swedish Meatballs

These pork and beef meatballs are served up with a flavorful gravy-like sauce over noodles or potatoes - your choice!

I just posted an Instant Pot Swedish Meatballs recipe earlier this year and thought I had done the thing where I accidentally made the same recipe thinking it was a new one that I had never tried before. However, it is slightly different. This one has a mixture of two proteins, beef and pork, and has milk, shallot, dill, and thyme. The other recipe also uses Worcestershire and heavy cream but this one uses sour cream. Slight variations but they are really nice to have because you might sway one way or another depending on the slight difference in flavor profile!

What You Need:

  • 1 lb. ground beef

  • 1 lb. ground pork

  • 1/2 cup Panko breadcrumbs

  • 1/3 cup milk

  • 2 large egg yolks

  • 1 medium shallot, diced

  • 2 cloves minced garlic

  • 1/2 tsp. dried thyme

  • 1/4 tsp. ground allspice

  • 1/4 tsp. ground nutmeg

  • Salt and pepper to taste

  • 1 Tbsp. canola oil

  • 2 Tbsp. all purpose flour

  • 2 cups beef stock

  • 1/2 cup sour cream

  • 2 Tbsp. chopped fresh dill

  • 2 Tbsp. chopped fresh parsley

Directions:

  1. In a large bowl, combine beef, pork, Panko, milk, egg yolks, shallot, garlic, thyme, allspice, and nutmeg. Season with salt and pepper. Do not overmix.

  2. Make 3/4 to 1 inch meatballs, around 30 to 32 meatballs.

  3. Set Instant Pot to saute. Add canola oil and add meatballs, working in two batches, to brown all sides of the meatballs. Don’t worry about cooking all the way through. Transfer to a paper towel-lined plate and set aside.

  4. Whisk in flour until lightly browned, cooking for about 1 minute.

  5. Add beef stock and scrape any browned bits from the bottom of the pot. Season with salt and pepper.

  6. Add meatballs to Instant Pot and cover. Set pressure to HIGH for 8 minutes.

  7. Release pressure and remove meatballs carefully with a slotted spoon.

  8. Set Instant Pot to saute and simmer until thickened, about 4 to 5 minutes.

  9. Add sour cream and season with salt and pepper to taste.

  10. Serve meatballs and sauce over the top of pasta or mashed potatoes. Garnish with dill and parsley.
