Instant Pot Bacon Ranch Chicken Pasta

Don’t sleep on this cheesy, rich bacon ranch chicken pasta made in the Instant Pot!

At some point, I may update my picture for this pasta recipe because I’m a sucker for the colorful rotini and it always looks so crazy in recipes. This recipe is the bacon chicken ranch cheddar combo, which is so yummy. This recipe also has a little cream cheese for some richness. And, of course, it’s another Instant Pot recipe, so there is all the goodness of the flavor combos with it being a one pot, quick recipe to throw together for dinner!

What You Need:

  • 2 Tbsp. olive oil

  • 1 1/2 lb. boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 packet dry ranch dressing mix

  • 1 box (16 oz) rotini pasta

  • 4 cups chicken broth

  • 1 cup cheddar cheese

  • 1 pkg. (8 oz) cream cheese, softened

  • 5 oz. baby spinach

  • 8 slices bacon, cooked and crumbled

Directions:

  1. Add olive oil to Instant Pot set to saute.

  2. Heat for 1 minute then add chicken and saute for 5 minutes or until no longer pink.

  3. Add ranch dressing mix and stir to combine.

  4. Add past on top of chicken then pour chicken broth over the top without stirring.

  5. Top with the lid and turn valve to sealing.

  6. Set on HIGH for 4 minutes.

  7. Once done, release pressure carefully.

  8. Stir in shredded cheddar, cream cheese, baby spinach, and bacon. Stir until cheese has melted and mixture is combined.
