Bananas Foster French Toast

A rich caramel sauce with bananas over the top of French toast is a winner winner!

This recipe was one that no one in my family asked for BUT my husband loves banana fosters and I love French toast. AND most of us like brinner so I thought this would be a lovely surprise for Nick. I honestly wasn’t sure if I’d really like it too much but it was incredible! The caramely bananas were insanely good paired with the whipped cream and French toast. I added a bit of cinnamon to the mix because I thought it would be a good little addition. And it appears that it sometimes does have cinnamon in bananas foster, so maybe I wasn’t too off there!

What You Need:

  • 1 can (13.5 oz) coconut milk

  • 2 large eggs

  • 1 tsp. vanilla

  • 6 slices brioche bread

  • 1/2 cup light brown sugar

  • 1/2 cup salted butter

  • 2 ripe bananas, thinly sliced

  • Whipped cream, if desired

  • Cinnamon, if desired

Directions:

  1. In a shallow dish, whisk together coconut milk, eggs, and vanilla.

  2. Dip a slice of bread into the egg mixture and then flip to coat both sides.

  3. Add coated bread to a griddle or skillet that has been preheated to a medium heat.

  4. Repeat with remaining pieces of bread.

  5. Cook until each side of the bread is golden brown.

  6. Meanwhile, add brown sugar and butter to a skillet over medium heat.

  7. Add bananas and let cook until the sauce has slightly thickened.

  8. For serving, slice brioche into triangles and top with banana fosters mixture. Top with whipped cream and cinnamon, if desired.
