Ground Turkey Bowls
A fantastic rice or pasta bowl with ground turkey, cabbage, and a savory sauce ready in under 30 minutes.
And finishing out the week with another quick meal you can throw together on a busy week. One thing I really like about this recipe is the use of coleslaw mix instead of having to chop up a head of cabbage. A lot of times I cannot find a smaller head of cabbage and we have leftovers and no one will outright eat cabbage in my house (outside of me). Love the hoisin sauce getting drizzled on top too!
What You Need:
For the Bowls:
1 lb. lean ground turkey
1 1/2 tsp. fresh minced ginger
3 cloves minced garlic
2 cups coleslaw mix
2 green onions, sliced
Cooked rice or noodles for serving
Hoisin sauce for garnish
Sesame seeds for garnish
For the Sauce:
1/3 cup water
1/3 cup beef or chicken broth
1/4 cup soy sauce
1 Tbsp. brown sugar
1 tsp. sriracha
1 tsp. sesame oil
1 Tbsp. cornstarch
Directions:
In a skillet over medium-high heat, cook turkey until no pink remains, adding ginger and garlic near end of cooking. Drain if needed.
While cooking turkey, mix together all sauce ingredients except cornstarch and set aside.
Add coleslaw mix to turkey and cook for 3 minutes or until slightly softened.
Make a empty circle in the center of the skillet and add sauce. Cook until hot and bubbly.
Mix together 1 Tbsp. water with cornstarch making a slurry. Whisk into sauce until thickened.
Stir all together and simmer for 2 minutes.
Remove from heat and spoon over rice or noodles.
Drizzle with hoisin and garnish with green onions and sesame seeds.
