Creamy Bacon Fettuccine
A fantastically creamy fettuccine that’s giving carbonara all day!
My oldest requests two dishes more than any other: alfredo pasta and carbonara. This recipe doesn’t say it’s carbonara but it absolutely is. I bet that I added this to our monthly meal plan knowing he would like it. I’m sure I have posted multiple recipes that are similar but I have no issue in posting another. I really like green peas in my carbonara but this one wasn’t bad at all. Very creamy and I loved the parsley in it to offset the salty cheesy and bacon elements.
What You Need:
2 large eggs
1/4 cup heavy cream
1/3 cup Parmesan cheese
1 tsp. freshly chopped parsley
1/4 tsp. salt
1/2 tsp. red pepper flakes
1/2 lb. bacon
1 small onion, chopped finely
1/2 lb. spaghetti
Directions:
In a bowl, beat eggs, heavy cream, Parmesan, parsley, salt, and red pepper flakes.
Meanwhile, fry bacon in a medium skillet until crisp. Crumble and set aside.
Reserve 1 Tbsp. of bacon grease and discard (or save) the rest.
Saute onion in grease until translucent and golden.
Cook pasta according to package directions. Drain reserving the pasta water.
Immediately add cream and onions and stir over low heat for a few minutes (to prevent eggs from scrambling).
Stir in bacon and serve with additional Parmesan, if desired.
