Ginger Lime Pork with Coconut Rice
A bowl full of caramelized ginger lime pork over the fluffiest coconut rice with a hint of sweetness!
Hello, friends! It’s a busy time of year despite having 2 kids in college and only one in grade school. Work is somehow also busy even though it’s nowhere near busy time. So it is BUSY all around. This is when recipes like this come in clutch. Under 30 minutes and only dirties a skillet and a saucepan? Super flavorful and the coconut rice is so incredible. I kind of just want that all by itself all the time.
What You Need:
For the Coconut Rice:
2 cups jasmine or long grain white rice, rinsed
1 can (14 oz) coconut milk
1 cup water
1/2 tsp. sea salt
1 to 2 tsp. granulated sugar
For the Ginger Lime Pork:
1 Tbsp. olive oil
3 green onions, sliced and separate green and white parts
4 cloves minced garlic
1 1/2 Tbsp. minced fresh ginger
1 1/2 lb. ground pork
1/3 cup light brown sugar
3 Tbsp. lime juice
1 Tbsp. sriracha
Salt and pepper to taste
Toppings: Chopped peanuts, lime wedges, fresh herbs (cilantro, mint, or Thai basil)
Directions:
For the Coconut Rice: Add rice, coconut milk, water, sea salt, and sugar to a large saucepan. Bring to a boil over medium-high heat.
Give a quick stir and cover. Turn heat to low and cook for 15 minutes.
Turn off heat and let rest for 10 minutes. Uncover and fluff with a fork.
For the Ginger Lime Pork: Meanwhile, heat oil over high heat in a large saute pan. Add white parts of scallions, garlic, and ginger. Saute for 1 to 2 minutes.
Add pork and break up while it cooks. Cook until no longer pink.
Add brown sugar, lime juice, and sriracha and stir until evenly combined. Let pork cook, undisturbed, for 2 minutes.
Then stir and let cook for an additional 1 to 2 minutes, undisturbed.
Taste to season with salt and pepper and additional sriracha.
Serve over rice with desired toppings.
