Garlic Butter Steak Bites

This quick steak recipe is garlicky, herby, and buttery and can be served several ways!

A few years ago, my family went through a phase of eating steak every other week or so. This is pretty rare for us as steak for 5 people can get expensive but we were on one. We had several recipes we were cycling through and this was one of them. It’s just a slightly different way to enjoy a sirloin steak and it’s a bit more versatile as you can serve it over a bed of rice or quinoa, pasta, or mashed potatoes. In my pic, you can see my mashed potatoes off to the side. I ended up combining the two and it was a really good pairing. The garlic herb butter is so dang good with the steak. This also was a really nice recipe for my youngest who had just figured out steak was delicious but was also trying to be independent as it was precut into bite-size pieces!

What You Need:

For the Steak:

  • 2 lb. sirloin steak, room temperature

  • 1 Tbsp. olive oil

  • 2 tsp. salt

  • 2 tsp. black pepper

  • 2 tsp. garlic powder

  • 2 Tbsp. neutral oil

For the Garlic Butter:

  • 1/2 cup unsalted butter

  • 1 small shallot, minced

  • 1/4 tsp. salt

  • 1/4 tsp. black pepper

  • 2 tsp. minced rosemary

  • 2 tsp. minced thyme

  • 6 cloves minced garlic

  • 2 Tbsp. Worcestershire sauce

  • 1 Tbsp. minced Italian parsley

Directions:

  1. For the Steak: Pat sirloin steak dry and cut into 1-inch cubes and add to a medium bowl.

  2. Toss in olive oil to coat. Then season with salt, pepper, and garlic powder coating each piece evenly.

  3. In a cast iron skillet heated over medium-high heat, add 2 Tbsp. neutral oil and add steak, cooking in several batches to preferred doneness.

  4. Once last batch of steak is cooked, set steak aside and reduce heat to medium.

  5. For the Garlic Butter: Add butter and melt. Once melted, add shallot and season with salt and pepper.

  6. Cook for 1 to 2 minutes before adding rosemary, thyme, and minced garlic. Cook for an additional 30 seconds.

  7. Add back in cooked steak with Worcestershire and toss in garlic butter. Cook for an additional 2 minutes.

  8. Serve garnished with Italian parsley. This can be served on its own or over the top of cooked rice, pasta, or mashed potatoes.
