Garlic Butter Chicken & Potatoes

A simple sheet pan recipe tossed in a delicious garlic butter mixture!

I love sheet pan meals. They are so convenient and dirty way fewer dishes, what’s not to love?! I paired this delicious garlic butter chicken and potatoes recipe with roasted brussels sprouts for a full meal and it was fantastic!

What You Need:

  • 4 boneless, skinless chicken breasts

  • 1 1/2 lb. baby yellow potatoes

  • 1/2 cup unsalted butter, melted

  • 4 cloves minced garlic

  • 1 Tbsp. dried parsley

  • 2 tsp. onion powder

  • 1 tsp. garlic powder

  • 1 tsp. Italian seasoning

  • 1 tsp. salt

  • 1 tsp. black pepper

Directions:

  1. Spray a rimmed half sheet pan with nonstick cooking spray. Add chicken in a single layer in the center of the pan.

  2. Cut potatoes into quarters and arrange around chicken.

  3. Whisk together butter, garlic, parsley, onion powder, garlic powder, Italian seasoning, salt, and pepper in a small bowl.

  4. Drizzle over top of chicken and potatoes.

  5. Bake in a preheated 400 degree oven for 25 to 30 minutes, stirring potatoes gently about halfway through cooking.
