Crunchy Roll Bowl
An Asian style bowl with your choice of protein and fresh veggies with a little crunch from fried onions on top!
We had poke bowls for my middle child’s birthday a few years ago and that spawned a craving of doing something similar for nights when we have Asian food. This recipe is super easy because you can change it up however you want to change it up based on what you want to eat. We chose beef for our protein but you can do whatever you want. My family really loves bowls like this - I mean burrito bowls are a staple so it’s not surprising that we loved this recipe.
What You Need:
Prepared protein of your choosing: tofu, chicken, pork, beef, tuna, shrimp, etc.
1 cup rice, uncooked
2 cups frozen shelled edamame
1 cucumber, finely diced
1 avocado, chopped
1 jalapeno, cut into slices
1/2 cup teriyaki sauce or other savory-sweet sauce
1/2 cup crunchy fried onions, crushed
Spicy mayo (sriracha mayo is fantastic!)
Directions:
Cook rice and edamame according to package directions.
Assemble bowls with rice, protein, teriyaki sauce, edamame, cucumber, jalapeno, crunchy onions, and spicy mayo.
