Fully Loaded Gyro Bowls
A lemon rice base with Greek meatballs and all the toppings your heart desires!
I’m just a simple gal who is obsessed with the Greek flavor combos. Any time I get to have feta with cucumber and tomato, I’m so happy. I was excited about this bowl because fully loaded in the recipe name immediately grabbed my attention. There are delicious Greek meatballs that can be made with beef or lamb, homemade tzatziki sauce, lemon rice, tomato & cucumber salad, and any toppings you want to load that bowl up with!
What You Need:
For the Meatballs:
1 lb. ground beef or lamb
1/4 cup minced onion
3 cloves minced garlic
1 large egg
1/2 cup finely crumbled feta cheese
1 tsp. Greek seasoning
1/2 tsp. salt
For the Tzatziki Sauce:
1 to 2 cloves minced garlic
1/4 tsp. salt
Half of an English cucumber, peeled, grated, and drained
1 cup plain yogurt
1 Tbsp. chopped fresh mint
1 Tbsp. chopped fresh dill
Freshly ground black pepper
1 Tbsp. olive oil
For the Lemon Rice:
2 cups cooked rice
1 Tbsp. lemon juice
1/4 tsp. salt
For the Cucumber & Tomato Salad:
1 cup diced tomato
1 cup diced cucumber
1 Tbsp. olive oil
1/2 tsp. salt
For Garnishes:
Hummus
Crumbled feta
Kalamata olives
Chopped dill
Chopped parsley
Sumac
Pita bread
Directions:
For the Meatballs: Combine ingredients in a large bowl gently until just combined.
Roll into meatballs and place onto a foil or parchment paper lined baking sheet. Makes about 14 to 20 total.
Bake in a preheated 425 degree oven for 10 to 14 minutes or until cooked through.
For the Tzatziki: Stir together ingredients and refrigerate until ready to use.
For the Lemon Rice: Add cooked rice, lemon juice, and salt in a mixing bowl to stir and combine.
For the Cucumber & Tomato Salad: Add ingredients to a mixing bowl and gently stir.
Assemble the bowls: Divide rice into bowls. Top with meatballs, tzatziki, cucumber & tomato salad, and desired garnishes.
