Easy Steak Fajitas

Homemade fajita seasoning with steak, bell peppers, and red onion for an amazing and easy recipe!

I have been looking for a really solid fajita recipe for years. I’ve made plenty of absolutely delicious recipes but I’ve been chasing something closer to the favorite. The favorite being the Kroger fajita seasoning packet to make steak fajitas. My MIL used to send the packets to New York when we lived there because unfortunately nothing came close and there was not a Kroger to go to. This is probably the very closest I’ve gotten to replicating the Kroger mix and we really loved it. I usually only make fajitas with green bell and yellow onion, but this had the tricolor peppers with red onion and it was so good! I’ve always eaten my steak fajitas with sour cream and cheddar cheese so don’t mind the addition there to a traditional fajita!

What You Need:

For the Fajita Seasoning:

  • 1 Tbsp. cornstarch

  • 2 tsp. chili powder

  • 1 tsp. salt

  • 1 tsp. smoked paprika

  • 1 tsp. granulated sugar

  • 1/2 tsp. onion powder

  • 1/2 tsp. garlic powder

  • 1/4 tsp. cayenne pepper

  • 1/2 tsp. ground cumin

For the Fajitas:

  • 2 lb. flank steak

  • 1/4 cup vegetable oil, divided

  • 1 red bell pepper, thinly sliced

  • 1 green bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • 1/2 red onion, thinly sliced

  • 3 Tbsp. prepared fajita seasoning, divided

  • 8 corn or flour tortillas

  • 1 Tbsp. minced cilantro

  • 1 lime, cut into wedges

Directions:

  1. For the Fajita Seasoning: Stir together all ingredients in a small bowl. Any excess seasoning can be used

  2. For the Fajitas: Add steak to a medium bowl with half the oil and 2 Tbsp. prepared fajita seasoning. Mix well to combine.

  3. In another large bowl, add bell peppers and onions with other half of the oil and 1 Tbsp. prepared fajita seasoning. Mix well to combine.

  4. In a large skillet over medium-high heat, add steak and cook for 5 minutes on each side. Remove and let rest.

  5. Add veggies to same skillet and cook for 4 to 5 minutes, stirring often, until softened.

  6. When veggies are almost done, slice flank steak into strips and toss in with veggies.

  7. Add cilantro and lime juice. Cook for one additional minute.

  8. Serve in tortillas.
