Crumbl French Silk Pie Cookies
Even when it’s not French Silk Pie Cookie week, you can enjoy this Crumbl copycat!
When Crumbl first came to our area, we went pretty much every week to try out the new flavors. We have our favorites and the French silk pie flavor is definitely up there for all of us. It’s rich but super delicious. And it does taste like French silk pie. We don’t get Crumbl much anymore as the novelty kinda wore off and it’s an extra place for me to run each week but the downside is that some flavors only come once every so often. So my favorite thing to do is to find a copycat recipe. This isn't an identical recipe - I believe Crumbl starts with cake mix - however, it is close and it is 100% serviceable. And by serviceable, I mean it’s really hard to not eat more than one because these are huge cookies and that would give you the worst tummy ache.
What You Need:
For the Cookies:
10 Oreo cookies
1 1/4 cups all purpose flour
1 Tbsp. cornstarch
1/4 cup dark cocoa powder
1/2 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1/2 cup unsalted butter, softened
1/4 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 tsp. vanilla extract
For the Chocolate Silk Pie Filling:
2 oz. instant chocolate pudding mix
1/2 cup milk
3/4 cup heavy cream
1/4 cup powdered sugar
1 tsp. vanilla extract
3 Tbsp. semisweet chocolate chips or high quality chocolate bar, melted
For the Whipped Topping:
1/3 cup heavy cream
2 Tbsp. powdered sugar
1/4 tsp. vanilla extract
Chocolate curls (I make with a potato peeler and a Hershey bar)
Directions:
For the Cookies: In a food processor, process Oreos together until finely crushed.
In a medium bowl, combine crushed Oreos, flour, cornstarch, cocoa powder, baking soda, baking powder.
In a stand mixer, beat together softened butter, brown sugar, and granulated sugar until light and creamy.
Add egg and vanilla and mix until combined. Scrape the sides if needed.
Add the cookie and flour mixture and mix until just combined.
Use a large cookie scoop to place 8 equally sized cookie dough balls (about 1/4 cup of dough each) onto a parchment paper lined baking sheet.
Flatten to about 1-inch thickness and bake in a preheated 350 degree oven for about 10 minutes.
Once cookies are done cooking, use a 1/3 cup measuring cup to make an indentation into the baked cookies. Let cool fully.
For the Chocolate Silk Pie Filling: In a large bowl, mix together chocolate pudding mix, milk, heavy cream, powdered sugar, and vanilla extract with a hand mixer or in a stand mixer until thick and fluffy.
Add melted chocolate and whip again until combined.
Top cooled cookies with the filling.
For the Whipped Cream: In a clean, chilled bowl, whip together heavy cream, powdered sugar, and vanilla until stiff peaks form.
Top each cookie with a dollop of whipped cream and chocolate curls.
