Easy Better Than Takeout Chicken Fried Rice
A quick, classic recipe to make at home when you’re craving takeout fried rice!
Having a good chicken fried rice recipe in your arsenal is a must. There is going to be a period of not the best pictures because this era was during the winter months where I was taking pictures from my phone (because I had gotten rid of my Canon) on the warmest countertops in the warmest overhead shadow casting lighting. So forgive all the pictures but make all the recipes because they are keepers!
What You Need:
2 Tbsp. sesame oil
2 Tbsp. vegetable oil
1 lb. boneless, skinless chicken breasts, diced into 1/2-inch pieces
1 1/2 cups frozen peas and carrots
3 green onions, diced
2 to 3 cloves minced garlic
3 large eggs, lightly beaten
4 cups cooked rice
3 to 4 Tbsp. soy sauce
Salt and pepper to taste
Directions:
In a large skillet, add sesame oil and vegetable oil over medium high heat. Add chicken and cook for 3 to 5 minutes, flipping to cook on all sides.
Remove chicken with a slotted spoon to a plate and set aside.
Add peas, carrots, and green onions. Cook for 2 minutes, stirring intermittently.
Add garlic and cook for an additional minute.
Push vegetables to one side of the skillet and then add eggs, stirring as needed to scramble.
Add cooked chicken, cooked rice, and soy sauce. Stir to combine.
Cook for 2 minutes and taste for seasoning. Salt and pepper to taste.
