The Best Fettuccine Alfredo

A quick alfredo recipe that can be served with or without meat!

Any time I ask my family what they want to have on the meal plan for the month, my oldest is forever asking for chicken alfredo. We keep trying different recipes because I personally do not like any jarred alfredo sauce. This one is another from a Pioneer Woman cookbook. The recipe itself is meatless but you can serve it up with meat if you want. We did chicken, of course!

What You Need:

  • 1 lb. fettuccine noodles

  • 1/2 cup unsalted butter

  • 1 cup heavy cream

  • Salt and pepper to taste

  • 2 cups freshly grated Parmesan cheese

  • Lemon zest

Directions:

  1. Cook pasta according to package directions.

  2. In a saucepan, melt butter with heavy cream and heat through. Season with salt and pepper.

  3. Place 1 cup of Parmesan into a large serving bowl and pour butter and cream mixture over the top.

  4. Drain pasta (reserving pasta water) and immediately add to bowl with Parmesan, butter, and cream.

  5. Toss a couple of times and then add the other half of cheese and toss to combine.

  6. Thin with pasta water as needed.
