Taco Bell Mexican Pizza Copycat

This homemade Taco Bell Mexican Pizza is only a few steps more than regular tacos - but just as easy to make!

When I discovered copycat recipes, I was unbelievably excited and made a ton of recipes. Most of them were Taco Bell copycats and I think it's because even if you mess it up, it's still gonna be dang good "Mexican" food. Obviously, it's not authentic Mexican cuisine, but it's very much like the fast food restaurant and that's what matters in these copycats. I love how easy this Mexican Pizza is to make. It's honestly only a few more steps than regular tacos - you fry the shells and bake after assembling them. It doesn't really take that much longer to do it because you can fry while the meat cooks. I've made this recipe so many times and highly recommend it if you're looking for something slightly different on Taco Tuesday!

What you need:

  • 1 lb. ground beef

  • 1/2 tsp. salt

  • 1/2 tsp. minced onions (I did more - love me some onions!)

  • 1/2 tsp. paprika

  • 3 tsp. chili powder (original recipe person recommends Spanish)

  • 2 to 4 Tbsp. water

  • 8 flour tortillas (6 inch)

  • 1 cup cooking oil

  • 1 can (15 oz.) refried beans

  • 1/2 cup tomatoes, diced

  • 3/4 cup picante sauce or salsa

  • 1 cup shredded cheddar cheese

  • 1 cup shredded Monterey Jack cheese

  • 1/4 cup green onions, chopped 

  • Shredded lettuce for serving, if desired

Directions:

  1. Cook the ground beef over medium high heat until brown, then drain.

  2. Add salt, onions, paprika, chili powder, and water. Let mixture simmer over medium heat for 5 minutes, stirring often.

  3. Heat refried beans until easy to stir and maneuver.

  4. Heat oil in frying pan over medium high heat.

  5. When oil is hot, fry each tortilla for about 30 to 45 seconds per side. Be sure to pop any bubbles that form. Drain on a paper towel.

  6. To assemble: On a baking sheet, lay a tortilla down. Add enough beans to cover and spread. Then add meat. Add another tortilla. Then layer picante sauce or salsa, tomato, cheese, and green onions in that order.

  7. Bake in a preheated 400* oven for 8 to 10 minutes.

  8. Serve topped with lettuce, if desired.
