Surprise Flapjacks

These surprise flapjacks are full of a few ingredients that you don’t normally see in a pancake!

These flapjacks are chock-full of hearty ingredients that you don’t put in your everyday pancake including oats, cornmeal, and pecans. They end up giving wintery vibes, in my opinion, with the pecans and have a hint of cornbread texture. They are a really nice change from the ordinary!

What You Need:

  • 3/4 cup whole wheat flour

  • 1/2 cup all purpose flour

  • 1/2 cup old fashioned rolled oats

  • 1/4 cup yellow cornmeal

  • 1/2 Tbsp. baking powder

  • 1 tsp. baking soda

  • 1/2 tsp. salt

  • 6 Tbsp. unsalted butter, cut into small pieces

  • 2 large eggs

  • 2 cups buttermilk

  • 1/4 cup honey

  • 1/2 cup chopped pecans

Directions:

  1. Place flour, oats, cornmeal, baking powder, baking soda, and salt in a food processor. Pulse until well blended.

  2. Add butter to the food processor and process until it looks like coarse meal.

  3. In a large bowl, beat together eggs and buttermilk. Add honey and beat in.

  4. Add the flour mixture and fold in pecans.

  5. On a preheated griddle, ladle batter to make pancakes. Cook until golden brown on both sides.
