Sunny Day Rainbow Cake

Any day is a great day to celebrate with this fun, bright layer cake!

As I am updating my old posts in late 2017, I'm realizing how bad my baking skills were back in the day and how bad my pictures were. I think it's so strange that I posted them to the blog. I hope to make this over again and grease and line my pans, so my cakes don't stick to the bottom and fall apart. Plus I will let them cool before I move them. I literally had a Frankenstein's monster cake. It was crazy. Especially for how stunning this cake is when done correctly!

What you need:

  • 2 boxes white cake mix

  • Eggs [as called for on each cake box]

  • Oil [as called for on each cake box]

  • Gel food coloring

  • 2 cartons (8 oz. each) Cool Whip

  • 2 boxes (3.4 oz. each) vanilla instant pudding mix

  • 1 recipe frosting

Directions:

  1. Mix together the two boxes of cake with eggs and oil.

  2. Separate equally into 6 bowls. About 1 heaping cup in each bowl.

  3. Put some coloring in each bowl.

  4. Mix well and add more coloring if you would like. The brighter, the better.

  5. In a parchment paper-lined 8 or 9 inch cake pan...use about 3/4 cup if not a little more of the red batter. Then do about 3/4 cup of the orange. And a little less than 3/4 cup for the yellow. You want to get the batter as close to the middle as possible for this one.

  6. In your second pan, start with purple with a heaping 3/4 cup, then 3/4 cup of blue, then less than 3/4 cup of green, etc.

  7. In the second pan [that started with purple], do the rest of the yellow, then the rest of the orange, then the rest of the red.

  8. Do the same in the first pan, start with green, then blue, then purple.

  9. Bake according to box instructions. Let cool completely before moving to a wire rack.

  10. Place your layers on a plate or serving platter.

  11. Frost and serve.
