Sticky Honey Pork

Extremely delicious sweet and spicy sticky pork served over rice with hardboiled eggs on the side!

I love when a recipe surprises me (and the family) and it makes its way to our favorite list instantly. Nothing about this necessarily stood out as something that would blow us away but we did think it was going to be yummy. The sweet and spicy sauce was ridiculously good - I love how substantial it was and how it stuck to the pork.

What You Need:

For the Sauce:

  • 1/3 cup honey

  • 2 Tbsp. soy sauce

  • 1 tsp. sriracha

  • 2 tsp. rice vinegar

For the Pork:

  • 2 lb. thin, boneless pork chops, cut into strips

  • 1 Tbsp. cornstarch

  • 1 tsp. garlic powder

  • 1/2 tsp. salt

  • 1/8 tsp. ground black pepper

  • 2 to 4 Tbsp. olive oil

For Serving:

  • Cooked rice

  • Hard or soft boiled eggs

  • 3 green onions, minced

  • 2 tsp. sesame seeds

Directions:

  1. For the Sauce: Add honey, soy sauce, sriracha, and vinegar to a small bowl and whisk until combined. Set aside.

  2. For the Pork: Combine cornstarch, garlic powder, salt, and pepper in a bowl.

  3. Toss strips of pork in cornstarch mixture.

  4. Heat a little olive oil over medium high heat. Add a layer of pork without crowding the pan.

  5. Cook for 2 to 3 minutes to sear and transfer to a plate if cooking pork in batches. It doesn’t have to be cooked through just yet.

  6. Once all pork is seared, add back to skillet. Add sauce to the pan.

  7. Bring to a simmer over medium heat and simmer for 3 to 5 minutes until it thickens and pork is cooked through.

  8. Serve pork on rice topped with sesame seeds and green onions along with eggs.
