Slow Cooker Bacon Ranch Chicken
A ridiculously rich and delicious crockpot meal served your way - over baked potato, cooked rice, or hamburger buns!
I feel like I’ve made a few recipes with this very delicious combination of bacon, ranch, and chicken. This particular recipe is made in the crockpot (love!) and then you can serve it whatever way you want to. We chose to do baked potatoes because it sounded really yummy - and it was! I think serving it over the potato was a good way to keep from having your eyes bigger than your stomach situation. This is a fairly rich recipe so less is more!
What You Need:
3 lb. boneless, skinless chicken breasts
2 packets ranch seasoning mix
2 blocks (16 oz total) cream cheese
6 slices bacon, cooked and crumbled
1 cup shredded cheddar cheese
Green onions, diced, for garnish
Cooked rice, hamburger buns, or baked potatoes for serving
Directions:
In a slow cooker, add chicken and sprinkle with ranch seasoning.
Add cream cheese on top and cover.
Cook on LOW for 6 to 8 hours or HIGH for 4 hours.
Shred chicken with two forks and mix well.
Serve over top of cooked rice, hamburger buns, or baked potatoes. Garnish with bacon, cheddar cheese, and green onions.
