Sheet Pan Sausage & Veggies
Throw some smoked sausage and vegetables on a sheet pan and your dinner is a go!
I know, I know, where's the sheet pan? Well, I lost that picture. Story of the blog lately. But that is what happens with a hard drive failure. It doesn't take away from just how fabulous this recipe is. Kielbasa is another food that I didn't like as a child. I should say one of the few things I tried and didn't like as a child. But something changed when I became an adult and I love it now. I love all these veggies and I really love the seasonings for the recipe. It all comes together wonderfully and I know I will make it time and time again.
What You Need:
1 to 2 precooked smoked sausage, sliced into 1/2-inch rounds
1 bell pepper (any color), diced into bite size pieces
1 large zucchini, sliced into half moons
1 cup cherry or grape tomatoes
2 to 3 Tbsp. olive oil
1 Tbsp. dried onion flakes
1 Tbsp. smoked paprika
1 Tbsp. dried parsley
1 Tbsp. dried oregano
1 tsp. salt, plus some if needed
1/2 tsp. black pepper, plus some if needed
Parmesan cheese for garnish (optional)
Directions:
Line a baking sheet with aluminum foil and add the sausage and veggies to the pan.
Drizzle with olive oil then sprinkle with all the seasonings. Toss gently to coat and then make sure they are in a nice, even layer.
Bake in a preheated 400 degree oven for 30 minutes or until vegetables are tender. Toss half way through cooking.
Serve topped with Parmesan, if desired.
