Refried Bean Rollups

A quick meal that tastes eerily similar to a Taco Bell classic!

I classified these as a "copycat" recipe because I think they favor Taco Bell's bean burrito. They are a really quick, inexpensive, super yummy meal.

What you need:

  • 1 (16 oz.) can refried beans

  • 1/2 cup salsa

  • 1/2 tsp. chili powder

  • 8 flour tortillas

  • 1 cup shredded lettuce (I never have lettuce when I make these)

  • 1/2 cup shredded Monterey Jack cheese

Directions:

  1. Place beans, salsa, and chili powder in a small saucepan and warm up over medium high heat. It won't take you long.

  2. Spoon about 1/4 cup of bean mixture into the center of the tortilla and spread.

  3. Top with lettuce and cheese. Fold up and serve.
