Ranch Crockpot Pork Chops with Parmesan Mashed Potatoes

This crockpot recipe makes the most tender, flavorful pork chops that are perfect paired with garlic parmesan mashed potatoes.

This is such a good recipe for being a secretly flavor-packed, hearty meal. The potatoes were so, so good. I threw my whole baked potatoes into my Kitchenaid with the skins and everything and mashed them up using the paddle attachment. Easiest mashed potatoes ever! I really love potato skins, but if you don't, then you can scoop out the innards.

What you need:

  • 4 to 6 thick cut pork chops

  • 1 packet Ranch seasoning mix (homemade, if you like!)

  • 2 cans cream of mushroom soup

  • 4 to 5 large russet potatoes

  • 5 Tbsp. unsalted butter

  • 1 cup shredded Parmesan

  • 6 cloves garlic (roasted, optional}

  • 1 1/2 cup milk

  • 1 Tbsp. salt

  • 1 tsp. pepper

Directions:

  1. Place pork chops, Ranch, and soup into crockpot.

  2. Cook on LOW for 6 hours or HIGH for 4 hours.

  3. Bake your potatoes and mash. Add butter, Parmesan, garlic, milk, and salt and pepper.

  4. Serve with potatoes topped with pork and slathered in the leftover gravy from the crockpot!
