Poblano & Corn Queso
A hearty and milder queso that is great for a party with poblano and corn!
As a chronic recipe saver, I forget that I basically only make main dishes and so I have so so many non-main dish recipes saved. During any holiday is when I break out any recipe I can which includes appetizers like this queso! I believe this was a NYE dish and we all really loved it. You can’t go wrong serving up queso to a crowd. This one is a little heartier with corn, poblano, and tomato in it.
What You Need:
1 Tbsp. unsalted butter
1/3 cup minced onion
2 cloves minced garlic
1 poblano chile pepper, charred, peeled, seeded and diced
1 Tbsp. all purpose flour
1 cup milk
1/4 cup corn (cooked)
1 roma tomato, diced
1 1/4 cup shredded pepperjack cheese
Salt and pepper to taste
Directions:
In a large saucepan, melt butter over medium heat.
Add onion and cook for 2 minutes.
Then add garlic and poblano and cook for 2 minutes.
Stir in flour and cook for an additional minute.
Slowly whisk in milk. Bring mixture to a simmer.
Stir in corn and diced tomatoes. Simmer for an additional 2 to 3 minutes.
Remove from heat and stir in cheese until melted and smooth.
Season with salt and pepper to taste.
