One Pot Steak & Potatoes

A steak and potatoes dish that is one pot and ready in under 30 minutes - simple but extraordinary!

Sometimes we try a new recipe and it just immediately becomes a favorite. This steak and potatoes recipe is one of those. It’s very simple and that only makes it better. It’s one pot - which is fantastic. AND it’s ready in under 30 minutes. The only way this would be any better is if you added some type of a veggie - like broccoli, asparagus, or green beans with it. But we do steamed veggies in a bag in the microwave, so no need to dirty any additional dishes if I don’t have to. We made it multiple months in a row (which is a lot for my family!) and I’m not sure how anything can top such a grand slam of a recipe!

What You Need:

  • 2 Tbsp. olive oil

  • 3 Tbsp. butter, divided

  • 1 lb. Yukon gold potatoes, sliced into wedges

  • 1 packet ranch dressing seasoning mix

  • 1 1/4 lb. sirloin steaks, cut into 1-inch cubes

  • Salt and pepper

  • Chopped parsley for garnish

Directions:

  1. Heat a large cast iron skillet over medium high heat.

  2. Add olive oil, 2 Tbsp. butter, potatoes, and ranch seasoning mix. Stir.

  3. Cover and cook, stirring on occasion, until potatoes are fork tender. This should take about 15 minutes.

  4. Remove and set aside on a plate.

  5. Turn skillet up on high heat and add remaining 1 Tbsp. butter and steak. Season with salt and pepper.

  6. Sear steak until golden brown and to desired doneness.

  7. Combine steak bites and potatoes. Garnish with fresh chopped parsley and serve!
