Instant Pot Lemon Chicken Orzo Soup

A lemony chicken soup with orzo pasta, peas, and dill - all made in an Instant Pot!

I think this may be one of my favorite iterations of chicken soup because the pasta isn’t too big and I really love both dill and peas and they both went really well together with the rest of this soup’s ingredients. And, as you may have noticed, this is yet another Instant Pot recipe because I made a ton of new Instant Pot recipes when I finally got one.

What You Need:

  • 2 Tbsp. olive oil

  • 1 large onion, chopped

  • 2 large carrots, chopped

  • 2 stalks celery, chopped

  • 1 tsp. salt

  • 1 tsp. pepper

  • 4 cups chicken broth

  • 2 lemons, 1 cut in half and 1 cut into wedges for serving

  • 1 lb. chicken

  • 3/4 cup orzo

  • 1/2 cup frozen peas, thawed

  • 1/4 cup fresh dill, chopped

  • 2 Tbsp. fresh parsley, chopped

Directions:

  1. Add olive oil to Instant Pot set to saute. Add onion, carrots, and celery. Saute for 3 minutes.

  2. Season with salt and pepper and stir. Then add chicken broth.

  3. Add lemon halves, chicken breasts, and 4 cups of water.

  4. Add lid and set Instant Pot to the soup setting for 7 minutes.

  5. Release pressure and then remove lid. Remove chicken from soup and shred with two forks.

  6. Add orzo to soup and set Instant Pot to saute. Cook for an additional 6 minutes until pasta is cooked.

  7. Turn off Instant Pot and add chicken with frozen peas and dill.

  8. Garnish with parsley and serve with lemon wedges.
