Instant Pot Beef Carnitas

40 minutes in the Instant Pot to super flavorful shredded beef carnitas!

I love love love carnitas. We typically make pork ones most often but you gotta mix it up here and there and beef carnitas are also so great! This recipe is another Instant Pot recipe - this is from the era of first having my Instant Pot, so I was using that thing like every other day. Just long enough for the insert to be run through the dishwasher and put away.

What You Need:

  • 2 Tbsp. salt

  • 2 Tbsp. brown sugar

  • 1 Tbsp. ground cumin

  • 1 Tbsp. smoked paprika

  • 1 Tbsp. chili powder

  • 1 tsp. garlic powder

  • 1 tsp. ground mustard

  • 1 tsp. dried oregano

  • 1 tsp. cayenne pepper

  • 1 - 3 lb beef chuck roast

  • 3 Tbsp. canola oil

  • 2 large sweet onions, thinly sliced

  • 2 poblano peppers, seeded and thinly sliced

  • 2 chipotle peppers in adobo sauce, finely chopped

  • 1 jar (16 oz) salsa

  • 16 flour tortillas, warmed

  • 3 cups crumbled queso fresco OR shredded Monterey Jack cheese

  • Toppings: Cubed avocado, sour cream, minced cilantro

Directions:

  1. Mix together salt, brown sugar, cumin, paprika, chili powder, garlic powder, ground mustard, dried oregano, and cayenne pepper in a small bowl.

  2. Cut roast in half and rub with 1/4 cup of the spice mixture. The remaining spice mixture can be stored for a later use.

  3. In an Instant Pot on the Saute setting, add half the oil and heat. Brown half of the roast on all sides, remove, and repeat with the other half.

  4. Turn off Instant Pot and add meat back to the Instant Pot.

  5. Add onions and peppers on meat and then top with salsa.

  6. Top with the lid and turn valve to seal.

  7. Cook on HIGH for 40 minutes.

  8. Release pressure and then shred meat with 2 forks.

  9. To serve, place 1/2 cup of meat on a tortilla and top with cheese and toppings of your choosing!
