I used to make skillet fried diced potatoes all the time when I was a fresh, new adult. For some reason, I am just unable to make them now and I cannot figure out how I lost that skill, but I did. I have been attempting to find a recipe that would work for me and this was it! The parboil type step in this recipe really assisted in the cooking process and we really loved them.

What You Need:

  • 2 lb. new potatoes, cubed

  • 1 tsp. seasoned salt

  • 1 tsp. black pepper

  • 1 tsp. paprika

  • 1/2 tsp. garlic powder

  • 3 Tbsp. vegetable oil

Directions:

  1. In a small bowl, mix salt, pepper, paprika, and garlic powder. Set aside.

  2. In a medium pot, bring salted water to a simmer. Add cubed potatoes and boil until tender, about 6 to 8 minutes. Then drain.

  3. In a large cast iron skillet, add oil and heat over medium heat. Add drained potatoes in an even layer and cook for 5 minutes without stirring.

  4. Once they start to crisp up, stir. Add half the seasoning mix and then continue to cook over medium heat. Stir occasionally but not too much.

  5. After about 10 to 15 minutes of cooking, add the remaining seasoning and cook for 1 to 2 minutes more.
