Dill Pickle Grilled Cheese
A fantastic grilled cheese cooked in an herby, cheese butter - oh and it has pickles!
Hi Friends! I’m back with another recipe to share and if you didn’t know before, we are dill pickle fans in my household. Dill pickle soup is one of our staples for soup night and we love trying all kinds of different pickle recipes. This grilled cheese is fantastic not only because it has pickles but because the butter is “homemade” with a mixture of herbs and parmesan cheese. I used a high-quality multigrain bread which just made it even better. Take care to cook this one over lower heat to help the cheese melt and bread brown at the same time!
What You Need:
For the Dill Butter:
1 Tbsp. unsalted butter, room temperature
1 Tbsp. grated Parmesan cheese
1/4 tsp. dill weed
Dash of garlic salt
For the Sandwich (for one sandwich):
2 slices good quality bread
2 slices sliced provolone
Dill pickle slices
Directions:
For the butter: Mix together all ingredients and set aside.
For the sandwich: Spread half of the butter on the outside of one piece of bread.
Add a slice of cheese, sliced pickles, and a second slice of cheese on top of the unbuttered side of the bread.
Add another slice of bread on top and then spread the remaining butter on the outside of that slice.
Heat a skillet over medium heat and add sandwich.
Cook until golden brown and crispy then flip.
Cook until second side is golden brown and then remove from skillet.
Rest for 1 minute and then cut in half. Serve.
