Crockpot Corn Casserole

This corn casserole is amazing with fried chicken or as a side for a cookout - especially since it’s cooked in the crockpot!

I could not tell you the first time I tried corn casserole, but I absolutely loved it AND I think it is the reason that I gave cornbread a second chance and now like it. This is basically a cornbread casserole and it’s so good. I could not get enough of it. I think it’s great as is, but it would probably also be ridiculously good with cheddar and jalapeno!

What You Need:

  • 8 oz. cream cheese, softened

  • 2 large eggs, beaten

  • 1/2 cup granulated sugar

  • 1 box (8.5 oz.) corn muffin mix

  • 2 1/2 cups frozen corn

  • 1 can (16 oz.) creamed corn

  • 1 cup milk

  • 2 Tbsp. unsalted butter, melted

  • 1 tsp. seasoned salt

  • 1/4 tsp. nutmeg

Directions:

  1. Grease crockpot with nonstick spray or use a crockpot liner.

  2. In a bowl, mix together cream cheese, eggs, and sugar.

  3. Then add the remaining ingredients and mix well.

  4. Pour into crockpot and cook on HIGH for 2 to 4 hours.
