Creamy Chicken Gnocchi Soup

A quick and easy creamy soup that is ready in under 30 minutes and in one pot!

My kids are not fans of gnocchi and my middle doesn’t really like soups that have milk or cream in them, so this is not my kids’ favorite meal. However, my husband and I both love gnocchi soup. So we occasionally make it and the kids make alternate plans for their meal. It’s a nice compromise because I cannot imagine not having this soup! This one is a quick fix for sure with frozen precut carrots and cooked chicken - it’s done in one pot in under 30 minutes.

What You Need:

  • 2 Tbsp. salted butter

  • 1 bag (12 oz.) frozen sliced carrots

  • 2 shallots, diced

  • 3 cups hot water

  • 3 cups cooked chicken, diced or shredded

  • 1 can condensed cream of celery soup

  • 1 tsp. Italian seasoning

  • 1 lb. potato gnocchi

  • 2 1/2 cups fresh spinach, chopped

  • 1 1/2 cups heavy cream

Directions:

  1. In a large saucepan over medium heat, add butter and frozen carrots. Cook for about 5 to 7 minutes.

  2. Once carrots have softened, add shallots and cook for another 1 to 2 minutes.

  3. Add hot water, cooked chicken, cream of celery soup, and Italian seasoning. Stir well.

  4. Bring to a boil, stirring frequently.

  5. Once boiling, add gnocchi and spinach. Reduce to a simmer and cook for 4 to 7 minutes until gnocchi is done and spinach has wilted.

  6. Remove from heat and add heavy cream. Stir well.
