Copycat Chicken Salad Chick Lauryn’s Lemon Basil
A copycat chicken salad bursting with lemony basil flavor!
When I first started my current job almost 5 years ago, I had a coworker order Chicken Salad Chick often and she influenced me to try it. I then spent a few months trying each flavor and my all-time favorite is the Lauryn’s Lemon Basil. I knew I would have to find a copycat recipe because I love copycat recipes. If I can make something at home, I will. It tends to be more cost effective AND you get to make it in bulk and have it more than once. That’s such a win!
What You Need:
1 1/2 lb. chicken breasts
32 oz. chicken broth
1/2 cup mayonnaise
2 Tbsp. finely minced celery
2 tsp. dry Ranch dressing seasoning mix
1/2 tsp. salt
1/2 tsp. ground black pepper
1 Tbsp. lemon juice
3 Tbsp. fresh basil, minced
Directions:
Cook the chicken in a stockpot with the chicken stock over medium heat for 15 to 20 minutes or until cooked through.
Remove chicken from stock and shred with a stand mixer with a paddle attachment or by hand with two forks.
In a medium bowl, mix together celery, mayonnaise, Ranch mix, salt, and pepper.
Then add chicken and mix well. Store in an airtight container in the fridge.
Serve on a croissant or on a bed of lettuce.
