Cinnabon Cinnamon Rolls Copycat

Ooey gooey, large and in charge cinnamon rolls worthy of being called a copycat Cinnabon!

The one thing I really loved about Ft. Gordon (among other things) was that there were Cinnabons EVERYWHERE. Ft. Drum has Dunkin' Donuts...blehhhh. I miss Cinnabon a bunch. Here's how I coped with my broken heart.

Made this recipe again on 10/19/2011 - it turned out much better using my Kitchenaid Mixer. They are DEAD ON!

What you need:

For the Cinnamon Rolls:

  • 1 pkg. dry yeast (2 1/4 tsp.)

  • 1 cup milk, warm

  • 1/2 cup granulated sugar

  • 1/2 cup unsalted butter, softened

  • 1 tsp. salt

  • 2 large eggs

  • 4 cups all purpose flour

For the Filling:

  • 1 cup brown sugar, packed

  • 2 1/2 Tbsp. cinnamon

  • 1/2 cup unsalted butter, softened or melted

For the Icing:

  • 1/4 cup unsalted butter, softened

  • 1 1/2 cups powdered sugar

  • 1/4 cup cream cheese

  • 1/2 tsp. vanilla

  • 1/4 tsp. salt

Directions:

  1. For the cinnamon rolls: Dissolve the yeast in the warm milk. 

  2. Add sugar, butter, salt, eggs, and flour. 

  3. Mix well until a dough is formed.

  4. Knead gently into a large ball on a lightly floured surface.

  5. Put dough in a bowl, cover, and let rise in a warm place for 1 hour or until doubled.

  6. Roll dough out onto a lightly floured surface into a 21x16-inch rectangle about 1/4 inch thick.

  7. For the filling: Spread butter onto dough.

  8. Mix together sugar and cinnamon in a bowl and sprinkle evenly over the top of the butter.

  9. From the long end, tightly roll up the dough. Pinch at the seam to seal.

  10. Slice into 1 3/4-inch thick slices.

  11. Place into a lightly greased baking pan. Let rise, uncovered, for 1 hour.

  12. Bake in a preheated 400 degree oven for 15 to 20 minutes or until golden brown.

  13. For the icing: beat together all ingredients until fluffy.

  14. Spread on top of warm rolls.
